Recipe for Minced Fish with Tofu (鱼蓉豆腐羹)

Adapted and modifiedA Cook’s book of fish (鱼儿香)

Ingredients:
230-250g fish flesh (net weight) (N1)
1 box smooth tofu/ beancurd (approx 300g)
100 ml chicken stock/ 鸡汤或上汤 (N2)
1-1½ tbsp cornstarch solutions (mix corn flour with some water)
1 tbsp chopped spring onions
1 tbsp chopped coriander leaves

Seasonings:
½ tsp salt
¼ tsp sugar
¼ tsp sesame oil
1/8 tsp pepper

Methods:

  1. Heat up oil to pan-fry fish until cooked properly. Dish up. De-bone, flake out and loosen the fish flesh. Set aside.
  2. Removetofu from the box. Pat dry with kitchen towel. Cut into 2cm cubes.
  3. Heat up 1 tbsp oil to slightly pan-fry thetofu cubes. Then add in fish flesh and stir-fry until fragrant.
  4. Add in seasonings and stir-fry until well combined.
  5. Pour in chicken stock and bring it to a boil. Simmer for a while.
  6. Thicken the dish with cornstarch solutions.
  7. Sprinkle with chopped spring onions and chopped coriander leaves. (N5)
  8. Dish up and serve when it is hot.

Notes:

  1. The original recipe called for grouper haddock/ ikan kerapu (石斑鱼) but I used threadfin/ ikan kurau fish fillet (马友鱼). If you cook this dish for kids, it is recommended to use fish fillet because less risk of omitting fish bones during the process of de-boning.
  2. I mixed 1 teaspoon of Maggi chicken concentrate stock with 100 ml water to make the stock. You do not need to use all the stocks. It depends on the consistency you require for the dish.
  3. Do not over-stir the ingredients. Otherwise, they will turn mushy.
  4. Refer to this post on how to remove tofu/ beancurd.
  5. Before dishing up, you can add a dash of pepper and sesame oil to give this dish extra flavour.

        How abt using the frozen sutchi fillets avail at major supermkts? They cook easy and if u realli want minced fish, u can always steam the fillets first, and break it up.

        Also i wld add some chinese wolfberries to spice up the colors and increase the nutritional value.

    This dish reminds me of my childhood in Shanghai. I LOVED soft tofu dishes whether it had ground pork, shrimp or fish in it or all of them! 🙂

    oooo tofu! i love tofu! this looks interesting. i wouldn’t think of pairing fish meat with tofu (for fear of fishy smell) so must get really fresh fish! 🙂

    This is just like the way my mom cook for me last time when in hurry. Simple yet delicious. My mom use mackerel (Fish to make yong tau fu) to cook it usually. Feel more bouncy.

    This will be great for the kids, although I have found lately that fish has become quite expensive to have more than once a week, especially if you want fresh fish. We can get frozen fish but it’s just not the same, always comes out “watery” and even has a smell. Is it just me?
