  1. I cook mine stovetop all the time so tried this...pretty easy, no fuss and loved it BUT...I would urge anyone not to discard the liquid but to save it and freeze it because it makes an AWESOME base for split pea soup!!

  2. This was my very first corned beef I ever made. I made on St. Patrick's day for company and everone LOVED it! The potatoes came out wonderful!! We also made reubens out of some of the corned beef. I made a point of telling everyone "DON'T EAT THE CARROTS!!" It was a very fun evening! Thanks!

    KissMyTiara

  3. Don't forget the horseradish sauce to finish it off!!

  4. this was the leanest corned beef i have ever made, i used a 6 qt crockpot, layered the bottom with the sliced onion, 10 med red potatoes, halved, unpeeled, 2 handfuls of baby carrots, put a 4 lb corned beef atop, doubled the broth mix and i could barely shut it, but a few hours the kitchen smelled wonderful. after hours i turned the beef over and added the cabbage This wonderful meal was devoured, the full house and extras loved it!

  5. DH brought home some corned beef (which I've never made before) so I tried this recipe. I couldn't find any small cabbages so I tried one large one instead. Very tasty, I had been half expecting to hate corned beef and was pleasantly surprised. Thanks

Tweaks

  1. I couldn't imagine using beef broth for this. My tweak is to use apple juice or hard cider for the liquid. The sweetness of the apples balances out the saltiness of the corned beef and adds a nice flavor. I have made it this way for the past couple of years and everyone loves it.

  2. Sorry to burst the bubble, but the Irish do not eat corned beef - even on St. Patrick's Day. This was a tradition built up by Irish immigrants to the US (primarily NY and New England) because the cut of beef was inexpensive. My family visited Ireland three years ago (Most in Co Tipperary, a day in Galway, and 2 days in Dublin). NOWHERE could my oldest brother find corned beef (in his defense, I asked for colcannon and found it only in one restaurant in Nenagh). All that said, Erin go bragh! Let's let everyone be Irish for a day! Slan! M. O'Connell

  3. I use my slow cooker, add the juice from the package of corned beef, including the spice packet that comes with it. I then add a generous table spoon of pickling spice as that is the flavor I like. Add water as directed, and cook on low for 8- 10 hrs. I add halved baby red potatoes, celery with the meat, and then wedges of cabbage for the last hour., YUMMY

  4. I don't use beef broth (we don't need or want the additional sodium and it masks the taste of a good brisket- I cook the corned beef in water using either the spice pack that comes with it, or jarred "pickling spice", and add fresh parsley and fresh or dried dill. I also omit the caraway seeds.

    Helen V.

  5. the cabbage. Four ? Really ?

FAQs

Should corned beef be completely covered in water in crock pot? ›

Crock Pot. Remove Corned Beef from package and place in crock pot and completely cover with water. Cover and cook for approximately 11 hours on low or 5 hours on high, or until firmly fork tender. Please note that crock pot cooking times may vary greatly depending upon brand and style.

Why is my corned beef not tender in the crockpot? ›

Corned beef may not become as tender as desired in a crockpot due to its lean and tough nature. The brisket cut, commonly used for corned beef, has a lot of connective tissue, and it requires slow cooking at a low temperature to break down and become tender.

What is the preferred method to cook corned beef? ›

Boiling is the most common method, but you can also slow cook, bake, grill, or pan-fry your corned beef. Each method has its distinct flavor and cooking process, so it's worth trying them all to find the best fit for you. The most common method for cooking corned beef and cabbage is boiling.

What are the secrets to cooking corned beef? ›

To boil corned beef, put the meat in a large pot and cover it with plenty of water. Add a tablespoon or two of pickling spice as well as a few garlic cloves, a quartered onion, a carrot, and a few stalks of celery if you like. Bring everything to a boil, cover, and reduce the heat to maintain a steady simmer.

What happens if you don't rinse corned beef before cooking? ›

1. Not Rinsing the Meat Before Cooking. If you cook the meat straight from the plastic packaging or pulled the meat right away from the brine solution in the fridge without rinsing, you just might be in for a saltier meal than you bargained for.

Do you rinse corned beef before slow cooker? ›

Do you need to rinse corned beef before cooking? Yes, corned beef should be rinsed because it is cured in a salt brine; there is probably excess salt on the meat. The uncooked corned beef should be rinsed under cool running water before it is cooked. Is corned beef and cabbage a traditional Irish food?

Can you overcook corned beef in a slow cooker? ›

You can overcook corned beef in a Crock-Pot if it's cooked for too long at too high of a temperature. Overcooked corned beef can taste tough and stringy. It's best to follow the recommended cook time and temperature within the recipe.

Do you use the juice in the corned beef package? ›

To make the corned beef, open the sealed package right over the slow cooker, because you want to include the brine in the cooking liquid. Don't discard the brine. Place the meat into the cooker and add enough cold water to cover. Add the pickling spices, cover, and cook on high for 6–8 hours.

Does corned beef get more tender the longer it is cooked? ›

Information. Corned beef is made from one of several less tender cuts of beef like the brisket, rump, or round. Therefore, it requires long, moist cooking. Corned beef is safe once the internal temperature has reached at least 145 °F, with a three minute rest time, but cooking it longer will make it fork-tender.

Should I cook my corned beef fat side up or down? ›

Place brisket fat-side up. Barely cover the meat with water—about 1 inch—and keep the container covered throughout the cooking time. Allow about one hour per pound. OVEN COOKING BAG: Preheat the oven to 325 °F.

Why is my corned beef always tough? ›

Cooking over a high temperature.

High heat is not a friend to brisket. When cooked at a boil for too long, corned beef is likely to turn out tough and chewy, rather than soft and tender. Do this instead: Regardless of the cooking method, corned beef is best cooked over low heat.

Do you cook corned beef with the grain or against the grain? ›

Corned beef is like steak, in that it should be cut against the grain, meaning that your slices should be made perpendicularly to the direction of the muscle fibers. To identify the grain, look for parallel lines running across the length of the cooked corned beef.

What do I add to the water when cooking corned beef? ›

Place into a heavy-based pot and cover with cold water. Step 2 Bring pot to boil, remove grey foam that rises to the surface, then reduce heat to a low simmer. Step 3 Add aromatics such as a bay leaf, brown sugar, onion and cloves. Then add chunks of carrot, celery and onion to flavour the beef delicately.

What to eat with corned beef? ›

A long-simmered one-pot meal of corned beef cooked to perfection and served with tender cabbage, potatoes, and carrots would please any Irish-American on St. Patrick's Day. Add some mustard or a creamy horseradish sauce, and you have a true celebration.

Is it better to simmer or bake corned beef? ›

The USDA recommends simmering corned beef on the stovetop for 1 hour per pound of meat. If you're cooking yours in the oven, plan for 3 to 3 1/2 hours for a 2 1/2- to 3-pound cut.

Do you cover beef with water in slow cooker? ›

There is no need to cover the meat in liquid when cooking with a slow cooker, you only need enough liquid to cover the base of the slow cooker as the meat and vegetables will release liquid as they cook. Slow cooking beef is a simple and soothing winter option that never goes out of style.

Does corned beef need to be completely covered? ›

Since corned beef needs to cook with moist heat, you'll cover the pan or wrap the roast with aluminum foil to prevent it from drying out. Check the liquid as it cooks, replenishing it if needed. You can add vegetables during the last hour of cooking.

Does meat need to be submerged in liquid in crock pot? ›

Water or liquid is necessary to create steam. When cooking meat or poultry, the water or liquid level should cover the ingredients to ensure effective heat transfer throughout the crock. Some manufacturers of slow cookers recommend adding liquid to fill the stoneware 1/2 to 3/4 full.

Does corned beef need to be soaked in water? ›

Since no water is used on the smoker and the meat sits directly on the grill, pre-soaking it to remove the salt is necessary. You can soak it longer than 2 hours (up to 8 hours) to remove even more salt; change the water every 1 or 2 hours for maximum effect.
