Step II – Form The Potato Cutlets

Fry a diced onion in oil. Slice or dice-washed mushrooms and fry with the onions till the water evaporates.

Potato cutlets

  • 2 lbs (900g) of potatoes
  • 1 tsp of butter
  • 2 eggs
  • 1 tsp of salt
  • ½ tsp of pepper

Mushroom sauce

  • 1 lb (450g) of mushrooms
  • 1 big onion
  • 1 ½ cup of heavy cream
  • 2 tbsps of butter or clarified butter
  • salt, pepper

How To Make The Potato Cutlets?

  1. Peel and cook potatoes until soft. Drain them.
  2. Mash potatoes with butter then allow to cool.
  3. Add the remaining ingredients for the cutlets and mix everything together until you get the smooth consistency (you may use a hand masher for that).
  4. Using your hand, form small cutlets, then coat each of them with breadcrumbs.
  5. Fry the cutlets in oil for about 3-5 minutes on each side.
